Description
A delicious and easy taco pasta salad tossed in tangy French dressing, perfect for potlucks or a quick weeknight dinner.

- 8 ounces rotini or elbow macaroni
- 1 pound ground beef or turkey
- 1 packet taco seasoning
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1 cup corn (canned or frozen)
- 1 cup shredded cheddar cheese
- 1/2 cup sliced black olives
- 1/4 cup chopped green onions
- 1 cup French dressing
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and set aside to cool.
- In a skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat and stir in the taco seasoning. Follow package instructions for seasoning preparation.
- In a large bowl, combine the cooked pasta, seasoned meat, black beans, cherry tomatoes, corn, cheddar cheese, black olives, and green onions.
- Pour the French dressing over the salad and toss gently to combine. Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
Notes
- Feel free to add other vegetables like bell peppers or avocado.
- This salad can be made ahead of time and stored in the refrigerator for up to 3 days.
