Ingredients

  • 8 ounces rotini or elbow macaroni
  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (canned or frozen)
  • 1 cup shredded cheddar cheese
  • 1/2 cup sliced black olives
  • 1/4 cup chopped green onions
  • 1 cup French dressing
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside to cool.
  2. In a skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat and stir in the taco seasoning. Follow package instructions for seasoning preparation.
  3. In a large bowl, combine the cooked pasta, seasoned meat, black beans, cherry tomatoes, corn, cheddar cheese, black olives, and green onions.
  4. Pour the French dressing over the salad and toss gently to combine. Season with salt and pepper to taste.
  5. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
