Ingredients

- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the cooked quinoa, cherry tomatoes, cucumber, bell peppers, red onion, and parsley.
- In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
- Pour the dressing over the quinoa salad and toss to combine.
- Fold in the feta cheese gently.
- Divide the salad into meal prep containers and refrigerate until ready to take to work.
