Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 tablespoon ginger, minced
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • 2 tablespoons cornstarch (optional, for thickening)
  • Cooked rice, for serving
  • Chopped green onions, for garnish
  • Sesame seeds, for garnish

Instructions

  1. In a bowl, mix together honey, soy sauce, garlic, rice vinegar, ginger, sesame oil, salt, and pepper.
  2. Place the chicken thighs in the crock pot and pour the honey garlic mixture over the top.
  3. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through and tender.
  4. If you want a thicker sauce, remove the chicken once cooked and set aside. Mix cornstarch with a little water to create a slurry and stir into the sauce in the crock pot. Cook on high for an additional 15-30 minutes until thickened.
  5. Serve the sticky honey garlic chicken over fluffy rice, garnished with chopped green onions and sesame seeds.

Notes

  • You can substitute chicken breasts for thighs if preferred.
  • Adjust the amount of honey based on your sweetness preference.
  • For a spicier kick, add red pepper flakes to the sauce.
