A delicious and easy-to-make ranch taco pasta salad that’s perfect for potlucks and summer gatherings.

- 8 oz rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup black beans, drained and rinsed
- 1 cup corn, canned or frozen
- 1 cup shredded cheddar cheese
- 1/2 cup red onion, diced
- 1/2 cup bell pepper, diced
- 1/4 cup fresh cilantro, chopped
- 1 packet ranch dressing mix
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 tbsp lime juice
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooled pasta, cherry tomatoes, black beans, corn, cheddar cheese, red onion, bell pepper, and cilantro.
- In a separate bowl, mix the ranch dressing mix, sour cream, mayonnaise, lime juice, salt, and pepper until smooth.
- Pour the dressing over the pasta salad and toss until everything is well coated.
- Cover and refrigerate for at least 30 minutes before serving to let the flavors meld.
Notes
- Feel free to add other vegetables or proteins such as diced chicken or avocado.
- This salad can be made a day in advance for even better flavor.
