Ingredients

  • 8 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 cup shredded cheddar cheese
  • 1/2 cup red onion, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 packet ranch dressing mix
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 tbsp lime juice
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and rinse under cold water to cool.
  2. In a large bowl, combine the cooled pasta, cherry tomatoes, black beans, corn, cheddar cheese, red onion, bell pepper, and cilantro.
  3. In a separate bowl, mix the ranch dressing mix, sour cream, mayonnaise, lime juice, salt, and pepper until smooth.
  4. Pour the dressing over the pasta salad and toss until everything is well coated.
  5. Cover and refrigerate for at least 30 minutes before serving to let the flavors meld.
