This grilled lemon herb chicken is a perfect addition to your Memorial Day dinner. It’s flavorful, juicy, and easy to make on the grill.

- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- Juice of 2 lemons
- 2 cloves garlic, minced
- 2 teaspoons dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh parsley, for garnish
Instructions
- In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Add chicken breasts to the marinade and coat well. Cover and refrigerate for at least 30 minutes or up to 4 hours.
- Preheat your grill to medium-high heat.
- Remove chicken from the marinade and discard the marinade.
- Grill chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- Remove from grill and let rest for 5 minutes.
- Garnish with fresh parsley before serving.
