- 1 cup fresh spinach, chopped
- 4 oz cream cheese, softened
- 1/2 cup shredded mozzarella cheese

- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for brushing
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the chopped spinach, cream cheese, mozzarella cheese, Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.
- Using a sharp knife, create a pocket in each chicken breast by slicing them horizontally without cutting all the way through.
- Stuff each chicken breast with the spinach and cream cheese mixture, securing with toothpicks if necessary.
- Place the stuffed chicken breasts in a baking dish and brush the tops with olive oil. Season with additional salt and pepper if desired.
- Bake in the preheated oven for 25 to 30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Remove from the oven and let rest for a few minutes before slicing. Serve warm.
