- 2 pounds Pork Loin
- 2 tablespoons Olive Oil
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1 teaspoon Paprika
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 4 medium Potatoes
- 1 teaspoon Dried Rosemary
- 2 tablespoons Butter
- 2 tablespoons All-Purpose Flour
- 2 cups Chicken Broth
- 1/2 cup Milk
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a small bowl, mix together olive oil, garlic powder, onion powder, paprika, salt, and black pepper. Rub this mixture all over the pork loin.
- Place the pork loin in the air fryer basket and cook for 25-30 minutes, or until the internal temperature reaches 145°F (63°C).
- While the pork is cooking, toss the potato wedges with olive oil, rosemary, salt, and pepper. Place them in the air fryer for the last 20 minutes of the pork cooking time.
- Once the pork is done, remove it from the air fryer and let it rest for 10 minutes before slicing.
- To make the gravy, melt butter in a saucepan over medium heat. Stir in flour and cook for 1-2 minutes.
- Gradually whisk in chicken broth and milk, bringing to a simmer until the gravy thickens.
- Serve the sliced pork loin with crispy roasted potatoes and gravy.

- For extra flavor, marinate the pork loin overnight.
- Feel free to add additional herbs like thyme or sage to the seasoning mix.
