- 2 cups mixed vegetables (bell peppers, broccoli, carrots)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 teaspoon dried Italian herbs (optional)
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a large bowl, combine chicken breasts with olive oil, garlic powder, paprika, salt, pepper, and Italian herbs. Toss until the chicken is well coated.
- Add the mixed vegetables to the bowl and toss to combine with the chicken mixture.
- Place the chicken and vegetable mixture in the air fryer basket, ensuring they are spread out in a single layer.
- Cook in the air fryer for 15-20 minutes, shaking the basket halfway through cooking, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Remove from the air fryer and let rest for a few minutes before serving.
Notes
- You can use any combination of vegetables you prefer or have on hand.
- Adjust the cooking time based on the thickness of the chicken breasts.
- For added flavor, marinate the chicken in the seasoning mixture for 30 minutes before cooking.
