Ingredients

  • 1 1/2 cups granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 batch of buttercream frosting
  • Graduation-themed decorations (caps, diplomas, etc.)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt; mix well.
  3. Add the eggs, milk, oil, and vanilla extract to the dry ingredients and beat on medium speed for 2 minutes.
  4. Stir in the boiling water until the batter is smooth (the batter will be thin).
  5. Fill each cupcake liner about 2/3 full with batter.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Remove from the oven and let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. Once cooled, frost the cupcakes with buttercream frosting and decorate with graduation-themed decorations.
