- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup unsalted butter, softened
- 1 1/2 cups white sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 3 cups powdered sugar
- 2 tablespoons milk
- Food coloring (in school colors)
- Decorating sprinkles and edible glitter (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
- In a large bowl, cream together the butter and sugar until smooth. Beat in the egg, vanilla extract, and almond extract.
- Gradually blend the dry ingredients into the creamed mixture until just blended.
- Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets. Flatten each ball slightly with the bottom of a glass.
- Bake 8 to 10 minutes in the preheated oven, or until golden. Let cool on wire racks.
- In a separate bowl, mix powdered sugar and milk until smooth to make the icing. Divide into smaller bowls and add food coloring to match the school colors.
- Once cookies are cooled, decorate with icing and add sprinkles or edible glitter as desired.
Notes
- For a firmer icing, reduce the amount of milk.
- Store cookies in an airtight container at room temperature.
