  • 1 pound beef stew meat, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 stalks celery, chopped
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 2 cups low-sodium beef broth
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Add beef stew meat and brown on all sides, about 5-7 minutes.
  2. Add chopped onion and minced garlic to the pot. Sauté until the onion is translucent, about 3-4 minutes.
  3. Stir in the carrots, celery, bell pepper, and zucchini. Cook for another 5 minutes, stirring occasionally.
  4. Pour in the beef broth and diced tomatoes. Add thyme, rosemary, salt, and pepper, and bring to a boil.
  5. Reduce heat to low, cover, and let simmer for 25-30 minutes, or until the beef is tender and the vegetables are cooked through.
  6. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley if desired.
