- 1 pound beef stew meat, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 stalks celery, chopped
- 1 bell pepper, diced
- 1 zucchini, diced
- 2 cups low-sodium beef broth
- 1 can (14.5 ounces) diced tomatoes, undrained
- 2 teaspoons dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium-high heat. Add beef stew meat and brown on all sides, about 5-7 minutes.
- Add chopped onion and minced garlic to the pot. Sauté until the onion is translucent, about 3-4 minutes.
- Stir in the carrots, celery, bell pepper, and zucchini. Cook for another 5 minutes, stirring occasionally.
- Pour in the beef broth and diced tomatoes. Add thyme, rosemary, salt, and pepper, and bring to a boil.
- Reduce heat to low, cover, and let simmer for 25-30 minutes, or until the beef is tender and the vegetables are cooked through.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley if desired.
