- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup cooked rice or quinoa
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the diced onion and garlic, and sauté until the onion is translucent.
- Add the ground turkey to the skillet, breaking it apart with a wooden spoon. Cook until browned and cooked through.
- Stir in the bell pepper, zucchini, diced tomatoes, oregano, paprika, salt, and pepper. Cook for an additional 5-7 minutes until the vegetables are tender.
- Add the cooked rice or quinoa to the skillet, mixing well to combine. Heat through for 2-3 minutes.
- Serve hot, garnished with fresh parsley.
