A delicious tart made with fresh apricots, perfect for summer gatherings.

- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 large egg yolk
- 2 tablespoons cold water
- 4 cups fresh apricots, pitted and halved
- 1/4 cup brown sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 egg, beaten (for egg wash)
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine flour, butter, granulated sugar, and salt. Mix until crumbly.
- Add egg yolk and cold water; mix until a dough forms. Press dough into a tart pan and prick the bottom with a fork.
- In another bowl, mix the apricots, brown sugar, cornstarch, vanilla extract, and lemon juice.
- Pour the apricot mixture into the tart crust and spread evenly.
- Brush the edges of the crust with the beaten egg.
- Bake for 30-35 minutes or until the crust is golden and the apricots are tender.
- Let cool before serving. Enjoy!
Notes
- You can substitute fresh apricots with other fruits like peaches or plums.
- Serve with whipped cream or vanilla ice cream for added sweetness.
