  • 8 ounces rotini pasta
  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup red onion, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 cup salsa
  • 1/2 cup sour cream
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and set aside to cool.
  2. In a skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat.
  3. Add the taco seasoning and water as per packet instructions. Simmer for about 5 minutes until thickened.
  4. In a large bowl, combine the cooked pasta, seasoned meat, black beans, corn, cherry tomatoes, cheese, red onion, bell pepper, and cilantro.
  5. In a separate bowl, mix together the salsa and sour cream. Pour over the pasta salad and toss to combine.
  6. Season with salt and pepper to taste. Serve immediately or refrigerate for later.
