This easy taco pasta salad is a quick and delicious dish perfect for potlucks, picnics, or a simple weeknight dinner.

- 8 ounces rotini pasta
- 1 pound ground beef or turkey
- 1 packet taco seasoning
- 1 can black beans, rinsed and drained
- 1 cup corn, frozen or canned
- 1 cup cherry tomatoes, halved
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup red onion, diced
- 1/2 cup bell pepper, diced
- 1/4 cup fresh cilantro, chopped
- 1 cup salsa
- 1/2 cup sour cream
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions. Drain and set aside to cool.
- In a skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat.
- Add the taco seasoning and water as per packet instructions. Simmer for about 5 minutes until thickened.
- In a large bowl, combine the cooked pasta, seasoned meat, black beans, corn, cherry tomatoes, cheese, red onion, bell pepper, and cilantro.
- In a separate bowl, mix together the salsa and sour cream. Pour over the pasta salad and toss to combine.
- Season with salt and pepper to taste. Serve immediately or refrigerate for later.
Notes
- Feel free to customize the salad with your favorite taco toppings, such as avocado, jalapeños, or olives.
- This salad can be made ahead of time and stored in the refrigerator for up to 3 days.
