Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 2 cups vegetable broth
  • 1 cup quinoa, rinsed
  • 1 cup corn (fresh or frozen)
  • 1 avocado, sliced
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  2. Add minced garlic, bell pepper, and zucchini. Cook for another 3-4 minutes until the vegetables are slightly softened.
  3. Stir in cherry tomatoes, black beans, cumin, chili powder, salt, and pepper. Cook for 2 minutes until heated through.
  4. Pour in vegetable broth and bring to a boil. Stir in quinoa and corn. Reduce heat to low, cover, and simmer for 15 minutes or until quinoa is cooked and liquid is absorbed.
  5. Remove from heat and let sit for 5 minutes. Fluff with a fork and serve topped with avocado slices and fresh cilantro.

  • Feel free to customize the vegetables based on what you have on hand.
