- 4 cups Mixed Greens Salad (Any mix of your favorite greens)
- 1 cup Cherry Tomatoes (Halved)
- 1 Cucumber (Sliced)
- 1/2 cup Feta Cheese (Crumbled)
- 2 tablespoons Olive Oil (For dressing)
- 1 tablespoon Lemon Juice (Freshly squeezed)
- to taste Salt and Pepper
- 2 Whole Wheat Wrap (For wraps)
- 1/2 cup Hummus (For spreading)
- 1 Avocado (Sliced)
Instructions
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to combine.
- Lay a whole wheat wrap flat and spread a layer of hummus over it.
- Layer sliced avocado on top of the hummus.
- Add a handful of the prepared salad mixture on top of the avocado.
- Roll the wrap tightly and cut in half to serve.
Notes
- Feel free to add grilled chicken or shrimp for added protein.
- Use any seasonal vegetables in the salad for variety.
