Ingredients

  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine sliced peaches, granulated sugar, lemon juice, and vanilla extract. Toss to coat the peaches evenly.
  3. Transfer the peach mixture to a greased 9×13 inch baking dish.
  4. In a separate bowl, mix together rolled oats, flour, brown sugar, and cinnamon.
  5. Pour melted butter over the oat mixture and stir until crumbly.
  6. Spread the oat topping evenly over the peaches in the baking dish.
  7. Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and bubbly.
  8. Allow to cool slightly before serving. Enjoy warm with vanilla ice cream if desired.

Notes
