- 4 cups fresh peaches, peeled and sliced
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar, packed
- 1/2 teaspoon ground cinnamon
- 1/4 cup unsalted butter, melted
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine sliced peaches, granulated sugar, lemon juice, and vanilla extract. Toss to coat the peaches evenly.
- Transfer the peach mixture to a greased 9×13 inch baking dish.
- In a separate bowl, mix together rolled oats, flour, brown sugar, and cinnamon.
- Pour melted butter over the oat mixture and stir until crumbly.
- Spread the oat topping evenly over the peaches in the baking dish.
- Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and bubbly.
- Allow to cool slightly before serving. Enjoy warm with vanilla ice cream if desired.
Notes
- For added flavor, you can mix in some chopped nuts or coconut to the oat topping.
- Feel free to substitute some of the peaches with other fruits like blueberries or raspberries for a mixed fruit crisp.
