- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 1 can kidney beans, drained
- 1 cup corn, frozen or canned
- 2 cups cooked rice
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- In a large skillet, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
- Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent.
- Stir in the diced tomatoes, kidney beans, corn, cooked rice, chili powder, cumin, salt, and pepper. Mix well.
- Bring the mixture to a simmer and let it cook for about 10 minutes, stirring occasionally.
- If using, sprinkle shredded cheese on top and cover the skillet until cheese is melted.
- Serve hot and enjoy!
