Ingredients

- 1 pound of chicken breast, diced
- 2 cups of broccoli florets
- 1 cup of cherry tomatoes, halved
- 2 tablespoons of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of Italian seasoning
- Salt and pepper to taste
- 1 cup of cooked rice or quinoa
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, combine diced chicken, broccoli, and cherry tomatoes.
- Drizzle with olive oil and sprinkle with garlic powder, Italian seasoning, salt, and pepper. Toss to coat.
- Spread the mixture evenly on a baking sheet.
- Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
- Serve over cooked rice or quinoa.
