- 3 to 4 pounds corned beef brisket
- 1 tablespoon black peppercorns
- 1 tablespoon mustard seeds
- 1 teaspoon crushed red pepper flakes
- 1 onion, quartered
- 4 cloves garlic, minced
- 6 medium carrots, cut into 2-inch pieces
- 1 pound baby potatoes, halved
- 4 cups low-sodium beef broth
- 2 cups green cabbage, chopped
- Salt to taste
Instructions
- Place the corned beef brisket in the crock pot.
- In a small bowl, mix together the black peppercorns, mustard seeds, and crushed red pepper flakes. Rub this spice mixture all over the brisket.
- Add the quartered onion and minced garlic to the crock pot.
- Arrange the carrots and baby potatoes around the brisket.
- Pour the beef broth over the meat and vegetables.
- Cover and cook on low for 8 to 10 hours, or until the meat is fork-tender.
- In the last hour of cooking, add the chopped cabbage on top of the brisket.
- Once cooked, remove the corned beef from the crock pot and let it rest for 10 minutes before slicing.
- Serve the sliced corned beef with the vegetables and broth.
