Ingredients

  • 3 to 4 pounds corned beef brisket
  • 1 tablespoon black peppercorns
  • 1 tablespoon mustard seeds
  • 1 teaspoon crushed red pepper flakes
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 6 medium carrots, cut into 2-inch pieces
  • 1 pound baby potatoes, halved
  • 4 cups low-sodium beef broth
  • 2 cups green cabbage, chopped
  • Salt to taste

Instructions

  1. Place the corned beef brisket in the crock pot.
  2. In a small bowl, mix together the black peppercorns, mustard seeds, and crushed red pepper flakes. Rub this spice mixture all over the brisket.
  3. Add the quartered onion and minced garlic to the crock pot.
  4. Arrange the carrots and baby potatoes around the brisket.
  5. Pour the beef broth over the meat and vegetables.
  6. Cover and cook on low for 8 to 10 hours, or until the meat is fork-tender.
  7. In the last hour of cooking, add the chopped cabbage on top of the brisket.
  8. Once cooked, remove the corned beef from the crock pot and let it rest for 10 minutes before slicing.
  9. Serve the sliced corned beef with the vegetables and broth.
