Ingredients

  • 4 pounds corned beef brisket
  • 1 tablespoon black peppercorns
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 head of cabbage, cut into wedges
  • 1 pound baby potatoes, halved
  • 4 carrots, sliced
  • 2 tablespoons Dijon mustard
  • Salt to taste
  • Fresh parsley for garnish

Instructions

  1. Place the corned beef brisket in the crock pot and sprinkle with black peppercorns.
  2. Add the quartered onion and minced garlic on top of the beef.
  3. Pour the beef broth over the brisket.
  4. Cover and cook on low for 8-10 hours or until the beef is tender.
  5. About 1 hour before serving, add the cabbage wedges, baby potatoes, and carrots to the pot.
  6. Continue cooking until the vegetables are tender.
  7. Remove the corned beef from the crock pot and let it rest for a few minutes before slicing.
  8. Serve the corned beef with the vegetables, drizzled with Dijon mustard, and garnish with fresh parsley.
