- 4 pounds corned beef brisket
- 1 tablespoon black peppercorns
- 1 onion, quartered
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 head of cabbage, cut into wedges
- 1 pound baby potatoes, halved
- 4 carrots, sliced
- 2 tablespoons Dijon mustard
- Salt to taste
- Fresh parsley for garnish
Instructions
- Place the corned beef brisket in the crock pot and sprinkle with black peppercorns.
- Add the quartered onion and minced garlic on top of the beef.
- Pour the beef broth over the brisket.
- Cover and cook on low for 8-10 hours or until the beef is tender.
- About 1 hour before serving, add the cabbage wedges, baby potatoes, and carrots to the pot.
- Continue cooking until the vegetables are tender.
- Remove the corned beef from the crock pot and let it rest for a few minutes before slicing.
- Serve the corned beef with the vegetables, drizzled with Dijon mustard, and garnish with fresh parsley.
