This warm, fruity apricot cobbler is the perfect dessert for any occasion, and it can be ready in just 45 minutes!

- 4 cups fresh or canned apricots, sliced
- 1 cup granulated sugar, divided
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/2 cup unsalted butter, melted
- 1 teaspoon ground cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the apricots, 1/2 cup of sugar, lemon juice, and vanilla extract. Mix well and set aside.
- In another bowl, whisk together the flour, baking powder, salt, and the remaining 1/2 cup of sugar.
- Gradually add the milk and melted butter to the flour mixture, stirring until just combined.
- Pour the apricot mixture into a greased 9×13 inch baking dish.
- Spoon the batter over the apricots, spreading it out gently but not completely covering the fruit.
- Sprinkle the top with ground cinnamon if desired.
- Bake in the preheated oven for 30-35 minutes or until the top is golden brown and a toothpick inserted into the batter comes out clean.
- Allow to cool slightly before serving warm.
Notes
- Serve with vanilla ice cream or whipped cream for an extra treat.
- Feel free to substitute apricots with peaches or other fruits if desired.
