Ingredients

  • 4 cups fresh or canned apricots, sliced
  • 1 cup granulated sugar, divided
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon ground cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the apricots, 1/2 cup of sugar, lemon juice, and vanilla extract. Mix well and set aside.
  3. In another bowl, whisk together the flour, baking powder, salt, and the remaining 1/2 cup of sugar.
  4. Gradually add the milk and melted butter to the flour mixture, stirring until just combined.
  5. Pour the apricot mixture into a greased 9×13 inch baking dish.
  6. Spoon the batter over the apricots, spreading it out gently but not completely covering the fruit.
  7. Sprinkle the top with ground cinnamon if desired.
  8. Bake in the preheated oven for 30-35 minutes or until the top is golden brown and a toothpick inserted into the batter comes out clean.
  9. Allow to cool slightly before serving warm.

Notes
