Ingredients

  • 1 pound boneless, skinless chicken breasts, sliced into thin strips
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Tortillas, for serving
  • Optional toppings: sour cream, guacamole, salsa, cheese, cilantro

Instructions

  1. In a large bowl, combine the sliced chicken, bell peppers, onion, olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Toss until everything is well coated.
  2. Preheat your air fryer to 400°F (200°C).
  3. Once preheated, add the chicken and pepper mixture to the air fryer basket in an even layer. You may need to cook in batches depending on the size of your air fryer.
  4. Cook for 12-15 minutes, shaking the basket halfway through, until the chicken is cooked through and the vegetables are tender.
  5. Remove from the air fryer and serve immediately with warm tortillas and your choice of toppings.
