Ingredients

- 1 cup dried apricots
- 1 cup rolled oats (use gluten-free if needed)
- 1/2 cup peanut butter (or any nut butter of choice)
- 1/4 cup honey (or maple syrup for a vegan option)
- 2 tablespoons chia seeds
- 1/4 cup coconut flakes (unsweetened)
- 1 teaspoon vanilla extract
Instructions
- In a food processor, combine dried apricots, rolled oats, peanut butter, honey, chia seeds, coconut flakes, and vanilla extract.
- Pulse until the mixture is well combined and forms a sticky dough.
- If the mixture is too dry, add a little bit of water or more nut butter until the right consistency is achieved.
- Using your hands, roll the mixture into small balls, about 1 inch in diameter.
- Place the energy bites on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to set.
- Once set, store in an airtight container in the refrigerator for up to a week.
Notes
- Feel free to mix in other ingredients like chopped nuts or seeds for added texture.
- These bites can also be rolled in cocoa powder or crushed nuts for a different flavor.
