A delicious and crunchy pasta salad featuring taco flavors and topped with Doritos for an extra crunch.
Ingredients

- 8 oz elbow macaroni
- 1 lb ground beef or turkey
- 1 taco seasoning packet
- 1 cup cherry tomatoes, halved
- 1 cup shredded cheddar cheese
- 1 cup diced bell pepper
- 1 cup corn (canned or frozen)
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 tbsp lime juice
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 bag (8 oz) Doritos, crushed
- Salt and pepper to taste
Instructions
- Cook the elbow macaroni according to package instructions. Drain and set aside to cool.
- In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat.
- Add the taco seasoning and a little water (as directed on the seasoning packet) to the meat. Stir and let simmer for 5 minutes. Remove from heat and let cool.
- In a large mixing bowl, combine the cooked pasta, seasoned meat, cherry tomatoes, cheddar cheese, bell pepper, and corn.
- In a separate bowl, mix together the sour cream, mayonnaise, lime juice, garlic powder, onion powder, salt, and pepper until smooth.
- Pour the dressing over the pasta mixture and toss until everything is well coated.
- Chill in the refrigerator for at least 30 minutes before serving.
- Just before serving, fold in the crushed Doritos for added crunch.
Notes
- Feel free to customize the salad with your favorite taco toppings, such as jalapeños, olives, or avocado.
- This salad can be made a day ahead; just add the Doritos right before serving for the best texture.
