Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs, one at a time, mixing well after each addition.
- Stir in the buttermilk, bourbon, and chopped mint leaves until combined.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cupcakes cool completely on a wire rack.
- For the frosting, beat together the softened butter and powdered sugar until creamy.
- Add the bourbon and mix until smooth.
- Frost the cooled cupcakes and garnish with fresh mint leaves.
Notes
- For a stronger mint flavor, you can add a few drops of mint extract to the batter.
