Ingredients

  • 4 Chicken breasts (boneless and skinless)
  • 1 cup Parmesan cheese (grated)
  • 1 cup Panko breadcrumbs (for extra crunch)
  • 2 Eggs (beaten)
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • as needed Olive oil spray (for air frying)
  • 8 ounces Pasta (your choice)
  • 4 tablespoons Butter (for garlic butter sauce)
  • 4 cloves Garlic (minced)
  • 2 tablespoons Parsley (chopped, for garnish)

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a shallow bowl, mix together the grated Parmesan cheese, panko breadcrumbs, garlic powder, salt, and black pepper.
  3. Dip each chicken breast into the beaten eggs, allowing excess to drip off.
  4. Coat the chicken in the Parmesan breadcrumb mixture, pressing gently to adhere.
  5. Spray the air fryer basket with olive oil spray and place the chicken in a single layer. Spray the tops of the chicken with more olive oil.
  6. Cook the chicken for 10-12 minutes, flipping halfway through, until golden brown and cooked through.
  7. While the chicken is cooking, cook the pasta according to package instructions. Drain and set aside.
  8. In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  9. Add the cooked pasta to the skillet and toss to coat in the garlic butter. Season with salt and pepper to taste.
  10. Serve the crispy chicken over the garlic butter pasta, garnished with chopped parsley.

Notes

  • For a spicier kick, add red pepper flakes to the breadcrumb mixture.
  • Feel free to substitute chicken thighs for a juicier option.
  • You can use whole wheat panko for a healthier alternative.
