Description
These crispy air fryer chicken taquitos are filled with seasoned chicken and cheese, rolled tightly and cooked to perfection in the air fryer. Paired with a creamy avocado dipping sauce, they make for a delicious snack or meal.

Instructions
- In a mixing bowl, combine the shredded chicken, cheese, and taco seasoning. Mix until well combined.
- Heat the corn tortillas in a dry skillet or microwave until warm and pliable.
- Spoon about 2 tablespoons of the chicken mixture onto one end of each tortilla and roll tightly.
- Place the rolled taquitos seam-side down in the air fryer basket. Spray lightly with cooking spray.
- Air fry at 400°F (200°C) for 8-10 minutes, or until golden brown and crispy, flipping halfway through.
- While the taquitos are cooking, prepare the avocado dipping sauce. In a blender, combine the avocado, sour cream, lime juice, and salt. Blend until smooth.
- Serve the crispy taquitos hot with the creamy avocado dipping sauce on the side.
Notes
- For extra flavor, you can add diced jalapeños or onions to the chicken mixture.
- If you prefer a spicier sauce, add a dash of hot sauce to the avocado sauce.
- Store leftover taquitos in an airtight container in the refrigerator for up to 3 days.
