- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 4 cups vegetable broth
- 1 can (14.5 ounces) diced tomatoes
- 1 cup green beans, trimmed and cut into pieces
- 1 cup butternut squash, peeled and diced
- 1 cup kale, chopped
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.
- Stir in the garlic, cumin, thyme, and smoked paprika. Cook for an additional minute until fragrant.
- Pour in the vegetable broth and diced tomatoes. Bring to a boil.
- Add the green beans and butternut squash. Reduce heat to a simmer and cook for 15 minutes.
- Stir in the kale and cook for another 5 minutes until the kale is wilted.
- Season with salt and pepper to taste. Serve warm.
