Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 4 cups vegetable broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup green beans, trimmed and cut into pieces
  • 1 cup butternut squash, peeled and diced
  • 1 cup kale, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.
  3. Stir in the garlic, cumin, thyme, and smoked paprika. Cook for an additional minute until fragrant.
  4. Pour in the vegetable broth and diced tomatoes. Bring to a boil.
  5. Add the green beans and butternut squash. Reduce heat to a simmer and cook for 15 minutes.
  6. Stir in the kale and cook for another 5 minutes until the kale is wilted.
  7. Season with salt and pepper to taste. Serve warm.
