  • 1 cup corn (frozen or canned)
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup beef or vegetable broth
  • Toppings: shredded cheese, sour cream, chopped green onions

Instructions

  1. In a skillet, brown the ground beef or turkey over medium heat until fully cooked. Drain excess fat.
  2. Transfer the meat to the crockpot and add the chopped onion, garlic, bell pepper, crushed tomatoes, beans, corn, chili powder, cumin, paprika, salt, pepper, and broth.
  3. Stir well to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
