- 8 oz rotini pasta
- 2 cups cooked chicken, diced
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, diced
- 1/2 cup bell pepper, diced
- 1/4 cup fresh parsley, chopped
- 1/2 cup Italian dressing
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions. Drain and rinse under cold water until completely cool.
- In a large bowl, combine the cooked pasta, diced chicken, cherry tomatoes, cucumber, red onion, bell pepper, and parsley.
- Pour the Italian dressing over the salad and toss to combine. Season with salt and pepper to taste.
- Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
