  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • 1/2 cup crumbled queso fresco
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges, for serving
  • 1/2 cup sour cream
  • 1 tablespoon lime juice

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, sautéing until softened.
  2. Add ground beef, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  3. Stir in chili powder, cumin, paprika, salt, and pepper. Reduce heat and simmer for 5 minutes.
  4. In a small bowl, mix together sour cream and lime juice for the crema.
  5. Warm corn tortillas in a dry skillet or microwave until pliable.
  6. Assemble tacos by placing a portion of the beef mixture on each tortilla. Top with lettuce, tomatoes, avocado, queso fresco, and cilantro.
  7. Drizzle lime crema over the top and serve with lime wedges.
