Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
- In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the softened butter, eggs, vanilla extract, buttermilk, lime juice, and lime zest. Mix until well combined and smooth.
- Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cupcakes to cool completely on a wire rack.
- In a separate bowl, beat the cream cheese until smooth. Gradually add the powdered sugar and lime juice, mixing until creamy.
- If desired, add green and yellow food coloring to the frosting to achieve a festive look.
- Frost the cooled cupcakes with the cream cheese frosting and top with sprinkles if desired.
