- 2 lbs boneless, skinless chicken breasts
- 1 packet taco seasoning
- 1 can (14.5 oz) diced tomatoes with green chilies
- 1 cup chicken broth
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 cup corn kernels (fresh or frozen)
- 1 can (15 oz) black beans, drained and rinsed
- Salt and pepper to taste
- Taco shells or tortillas for serving
- Toppings: shredded cheese, lettuce, diced tomatoes, avocado, sour cream, salsa
Instructions
- Place the chicken breasts at the bottom of the crockpot.
- Sprinkle the taco seasoning evenly over the chicken.
- Add the diced tomatoes, chicken broth, onion, garlic, corn, and black beans on top.
- Stir gently to combine, ensuring the chicken is coated with the seasoning and other ingredients.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and shreds easily.
- Once cooked, shred the chicken using two forks and mix it back into the sauce.
- Serve warm in taco shells or tortillas with your favorite toppings.
