- 1 lb ground beef or turkey
- 1 can black beans, drained and rinsed
- 1 cup corn kernels, fresh or frozen
- 1 cup diced tomatoes
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/2 cup diced red onion
- 1/2 cup chopped bell peppers
- 1/4 cup fresh cilantro, chopped
- 1 tbsp taco seasoning
- 1 cup salsa
- Tortilla chips or mini tortillas for serving
Instructions
- In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat.
- Add black beans, corn, diced tomatoes, red onion, bell peppers, and taco seasoning to the skillet. Stir to combine and cook for about 5-7 minutes until heated through.
- Remove from heat and stir in half of the shredded cheese until melted.
- Transfer the mixture to a serving dish, top with remaining cheese and salsa.
- Garnish with fresh cilantro.
- Serve warm with tortilla chips or mini tortillas.
