  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg yolk
  • 1/4 cup almond meal
  • 1/2 teaspoon almond extract
  • 4 cups fresh apricots, halved and pitted
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1/4 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, powdered sugar, and salt. Add the cold butter and mix until the mixture resembles coarse crumbs.
  3. Stir in the egg yolk and mix until combined. Press the dough into a tart pan evenly across the bottom and up the sides. Prick the bottom with a fork.
  4. Bake the crust for about 15 minutes or until lightly golden. Remove from the oven and let cool.
  5. In a separate bowl, combine the apricots, granulated sugar, lemon juice, and cinnamon. Toss gently to coat the apricots evenly.
  6. Spread the almond meal over the cooled tart crust, then arrange the apricot mixture on top.
  7. Bake the tart for an additional 25-30 minutes until the apricots are tender and the tart is golden.
