- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1 large egg yolk
- 1/4 cup almond meal
- 1/2 teaspoon almond extract
- 4 cups fresh apricots, halved and pitted
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1/4 teaspoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the flour, powdered sugar, and salt. Add the cold butter and mix until the mixture resembles coarse crumbs.
- Stir in the egg yolk and mix until combined. Press the dough into a tart pan evenly across the bottom and up the sides. Prick the bottom with a fork.
- Bake the crust for about 15 minutes or until lightly golden. Remove from the oven and let cool.
- In a separate bowl, combine the apricots, granulated sugar, lemon juice, and cinnamon. Toss gently to coat the apricots evenly.
- Spread the almond meal over the cooled tart crust, then arrange the apricot mixture on top.
- Bake the tart for an additional 25-30 minutes until the apricots are tender and the tart is golden.
- Let the tart cool slightly before serving. Enjoy warm or at room temperature.
