A hearty and comforting breakfast casserole made with sausage, eggs, and bread, perfect for feeding a crowd.

- 1 pound breakfast sausage
- 6 slices of bread, cubed
- 12 large eggs
- 2 cups milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion (optional)
- 1/2 cup diced bell pepper (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, cook the sausage until browned and fully cooked. Drain excess fat.
- In a large bowl, whisk together the eggs, milk, salt, and pepper.
- Add the cubed bread, cooked sausage, cheese, and optional vegetables to the egg mixture. Stir until well combined.
- Pour the mixture into a greased 9×13 inch baking dish.
- Bake in the preheated oven for 30-40 minutes, or until the center is set and the top is golden brown.
- Let cool for a few minutes before slicing and serving.
Notes
- Feel free to add additional vegetables or spices to customize the casserole to your taste.
- This dish can be prepared the night before. Just cover and refrigerate before baking. Increase baking time by about 10 minutes if baking from cold.
