Ingredients

Instructions

  1. In a large bowl, combine quinoa, cucumber, tomatoes, bell pepper, red onion, and parsley.
  2. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Sprinkle feta cheese on top before serving.
  5. Chill in the refrigerator for at least 30 minutes before serving.
