Ingredients

- 1 cup quinoa
- 2 cups water
- 1 zucchini, sliced
- 1 bell pepper, chopped
- 1 red onion, sliced
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a bowl, toss zucchini, bell pepper, and onion with olive oil, salt, and pepper.
- Grill vegetables over medium heat until tender.
- Fluff quinoa with a fork and serve topped with grilled vegetables.
