Ingredients

- 8 rice paper wrappers
- 2 cups mixed greens
- 1 cup shredded carrots
- 1 cup cucumber, julienned
- 1/2 cup bell peppers, sliced
- 1/2 cup fresh herbs (mint, cilantro)
- 1/4 cup chopped peanuts
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon lime juice
- 1 tablespoon water
Instructions
- Prepare the rice paper wrappers by soaking them in warm water until soft.
- Lay the softened wrapper on a clean surface.
- Add a small amount of mixed greens, carrots, cucumber, bell peppers, and herbs.
- Fold the sides of the wrapper over the filling and roll tightly.
- Repeat with remaining wrappers and filling.
- In a bowl, mix peanut butter, soy sauce, honey, lime juice, and water to make the sauce.
- Serve the rolls with peanut sauce on the side.
