Ingredients
- Rice paper wrappers – 8 sheets
- Shredded cabbage – 2 cups
- Julienned carrots – 1 cup
- Sliced cucumbers – 1 cup
- Fresh mint leaves – 1/2 cup
- Fresh cilantro – 1/2 cup
- Cooked shrimp – 1 cup
- Peanut sauce – 1/2 cup
Instructions
- Soak rice paper wrappers in warm water until soft.
- Lay one wrapper on a flat surface.
- Add cabbage, carrots, cucumbers, mint, cilantro, and shrimp in the center.
- Fold the sides over the filling and roll tightly.
- Repeat with remaining wrappers and filling.
- Serve with peanut sauce for dipping.
