Instructions
- Preheat your oven to 400°F (200°C).
- Wash and trim the asparagus, and cut the cherry tomatoes in half.
- In a large bowl, mix olive oil, garlic powder, salt, and pepper.
- Add chicken, asparagus, and tomatoes to the bowl and toss well.
- Spread the mixture on a baking sheet.
- Bake for 25-30 minutes or until the chicken is cooked through.
- Drizzle with lemon juice before serving.
- Garnish with fresh basil.
Notes
- For a vegetarian option, replace chicken with tofu.
- Feel free to add other seasonal vegetables.
- Serve with a side of quinoa or rice.
