Ingredients

  • 1 cup buttermilk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract

  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 2 cups frosting of choice

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a bowl, mix flour, baking powder, and salt.
  4. In another bowl, cream butter and sugar until fluffy.
  5. Add eggs one at a time, mixing well after each.
  6. Stir in vanilla extract.
  7. Alternate adding flour mixture and buttermilk to the creamed mixture.
  8. Fold in mixed berries gently.
  9. Pour batter into prepared pans.
  10. Bake for 25-30 minutes or until a toothpick comes out clean.
  11. Allow cakes to cool before frosting.
  12. Frost as desired and decorate with additional berries.
