Ingredients

- 2 cups quinoa
- 4 cups vegetable broth
- 1 cup bell peppers, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup olive oil
- 1 tablespoon lemon juice
- Salt to taste
- Pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, bring vegetable broth to a boil.
- Add quinoa and reduce heat to low. Cover and simmer for 15 minutes.
- In a bowl, combine bell peppers, cherry tomatoes, olive oil, lemon juice, salt, and pepper.
- Fluff quinoa with a fork and mix with the vegetables.
- Serve warm.
