Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, bring vegetable broth to a boil.
  3. Add quinoa and reduce heat to low. Cover and simmer for 15 minutes.
  4. In a bowl, combine bell peppers, cherry tomatoes, olive oil, lemon juice, salt, and pepper.
  5. Fluff quinoa with a fork and mix with the vegetables.
  6. Serve warm.
