- 6 large eggs
- 1 cup spinach, chopped
- 1/2 cup bell pepper, diced
- 1/2 cup onion, diced
- 1/2 cup cheese, shredded
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, whisk the eggs.
- Add spinach, bell pepper, onion, cheese, salt, and pepper to the eggs.
- Heat an oven-safe skillet over medium heat and pour in the egg mixture.
- Cook for 5-7 minutes until edges are set.
- Transfer the skillet to the oven and bake for 15 minutes.
- Remove from oven and let cool slightly before slicing.
Notes
- Feel free to add other vegetables or meats.
- Store leftovers in the refrigerator for up to three days.
- Serve warm or at room temperature.
