Ingredients

- 2 cups quinoa
- 4 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red onion, chopped
- 1 bell pepper, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, bring water to a boil.
- Add quinoa and reduce heat. Simmer for 15 minutes.
- Remove from heat and let it sit for 5 minutes.
- Fluff quinoa with a fork.
- In a large bowl, combine quinoa, tomatoes, cucumber, onion, bell pepper, and feta.
- Drizzle with olive oil and lemon juice.
- Season with salt and pepper. Toss to combine.
- Serve chilled or at room temperature.

- Use seasonal vegetables for best flavor.
- Can be made a day in advance.
