Ingredients

  • 2 cups quinoa
  • 4 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, chopped
  • 1 bell pepper, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, bring water to a boil.
  3. Add quinoa and reduce heat. Simmer for 15 minutes.
  4. Remove from heat and let it sit for 5 minutes.
  5. Fluff quinoa with a fork.
  6. In a large bowl, combine quinoa, tomatoes, cucumber, onion, bell pepper, and feta.
  7. Drizzle with olive oil and lemon juice.
  8. Season with salt and pepper. Toss to combine.
  9. Serve chilled or at room temperature.
