Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, rinsed
- 1 cup corn, frozen or fresh
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/4 cup cilantro, chopped
- Juice of 2 limes
- Salt to taste
- Pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Remove from heat and let it sit for 5 minutes.
- Fluff quinoa with a fork and let it cool.
- In a large bowl, combine black beans, corn, bell pepper, avocado, and cilantro.
- Add cooled quinoa and lime juice. Mix well.
- Season with salt and pepper to taste.
- Serve chilled or at room temperature.
Notes
- This dish can be made a day in advance.
- Customize with your favorite vegetables.
