Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can black beans, rinsed
  • 1 cup corn, frozen or fresh
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped
  • Juice of 2 limes
  • Salt to taste
  • Pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Remove from heat and let it sit for 5 minutes.
  5. Fluff quinoa with a fork and let it cool.
  6. In a large bowl, combine black beans, corn, bell pepper, avocado, and cilantro.
  7. Add cooled quinoa and lime juice. Mix well.
  8. Season with salt and pepper to taste.
  9. Serve chilled or at room temperature.
