Description

Tender and flavorful short ribs cooked slowly in a crockpot.


Ingredients

  • 4 pounds beef short ribs
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 2 sprigs fresh thyme
  • 2 bay leaves

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Brown the short ribs on all sides.
  3. Remove ribs and place them in the crockpot.
  4. Add onion and garlic to the skillet; sauté until tender.
  5. Pour in beef broth and red wine; stir in soy sauce, brown sugar, black pepper, and salt.
  6. Bring to a simmer, then pour over the short ribs in the crockpot.
  7. Add thyme and bay leaves.
  8. Cover and cook on low for 8 hours or until ribs are tender.
  9. Remove ribs and strain the sauce before serving.

Notes

  • Serve with mashed potatoes or crusty bread.
  • Leftovers can be stored in the fridge for up to 3 days.
  • For a thicker sauce, reduce the liquid on the stove after cooking.
