Description
Tender and flavorful short ribs cooked slowly in a crockpot.
Ingredients

- 4 pounds beef short ribs
- 1 tablespoon olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon black pepper
- 1 teaspoon salt
- 2 sprigs fresh thyme
- 2 bay leaves
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Brown the short ribs on all sides.
- Remove ribs and place them in the crockpot.
- Add onion and garlic to the skillet; sauté until tender.
- Pour in beef broth and red wine; stir in soy sauce, brown sugar, black pepper, and salt.
- Bring to a simmer, then pour over the short ribs in the crockpot.
- Add thyme and bay leaves.
- Cover and cook on low for 8 hours or until ribs are tender.
- Remove ribs and strain the sauce before serving.
Notes
- Serve with mashed potatoes or crusty bread.
- Leftovers can be stored in the fridge for up to 3 days.
- For a thicker sauce, reduce the liquid on the stove after cooking.
