A quick and easy chicken fried rice recipe that is full of flavor.
Ingredients

- 2 cups cooked rice
- 1 cup cooked chicken, diced
- 1/2 cup peas and carrots
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 1 green onion, chopped
Instructions
- Heat vegetable oil in a large skillet over medium heat.
- Add cooked chicken and sauté for 2-3 minutes.
- Push chicken to the side and add beaten eggs. Scramble the eggs until cooked.
- Add peas and carrots, stirring until heated through.
- Add cooked rice and soy sauce. Mix well.
- Garnish with chopped green onion before serving.
Notes
- Use leftover rice for best results.
- Adjust soy sauce to taste.
- Add more vegetables if desired.
